The granite pan is a light-weight aluminum. It has a plate on the bottom for even heating. The handle is also able to go into the oven. PULSEs video on YouTube states to season the pan with oil on hot heat. Nowhere on the pans paper and cover does it state to do that. However, I did it. What happened was the plate on the bottom of the pan did convex, raised the middle of the pan from the high heat. This caused the oil in the pan to drain away from the middle and settle around the outer edge of the inside of the pan. After cooling, the convexed area did not return to its original shape. Of course, now, I wish I had never seasoned the pan. Because now, everything rolls away from the middle. And even the slightest amount of oil I use, drains quickly to the outer edge. Yes, I still like the pan. Just not happy that while cooking, my food will not have the benefit of the small amount of oil I would use for crispness. Also, any rounded food, such as sausage, now rolls away to the edges. Happy with the pan. Disappointed ?? with the outcome.
